Here’s a tool that comes in handy. I’ve been wetting cob and plaster down with a brush and dumping water all over everything. Then it occurred to me - Ding!
Get a sprayer.
This is great because you spray walls with just enough water… and not too much. It’s got different settings for misting or squirting.  A wonderful addition to the natural building tool collection if you don’t have running water.
